Here is a sample of what I eat in a day during week 3

My wife said, eat the fruit we have, so I did: Golden Berries, Strawberries, Raspberries, Blackberries, Kiwi, Banana, Apples and Oranges. Before you ask, yes this is typically my breakfast most mornings. I’m learning to eat when I am hungry and then I sort of graze throughout the day. It’s all healthy food with a few hiccups. I’m calling you out “hummus and plant based meat alternatives”, now I know. For lunches I love oven baked fries with mustard, this is definitely my to go meal. When my routine changed, and I was unsure of what to travel with, I resorted to the box of crackers and hummus. Not my normal choice, but I stuck to it and I didn’t stray.

I even made a vegetable soup the other night after watching a video. I figured why not, what do I have to loose, it looked easy, and I wanted to see if I could do it. Well I did, with a few hints from my wife, and help cleaning up the mess. I made the vegetable broth then strained it and added fresh vegetables and turned it into vegetable soup. Not a bad attempt for my first time ever making anything like this. The bits that look like ham or bacon in the picture are actually skin from the red potatoes that I added. The “beet” looking goodness is actually a purple carrot. In the end it still needed extra seasoning to boost the flavor. That said, there was no added salt and it was 100% plant based. I’m going to want to play around and perfect the recipe before I share, but I was completely happy and satisfied with my dinner.
